STAFF WINE TRAINING

We talk to dozens of restaurants on a regular basis and they often tell us one of their top challenges is training their waiting staff or front of house staff.  Especially as not every restaurant, bar, pub or hotel has their own sommelier to provide a customer-focused wine advise. For those who haven’t but who are keen to educate their staff about wine, we offer an affordable and effective 2-hour-long wine crash course at £200* (up to 14 people) to help your employees understand the characteristics and the types of wine better.

By investing in people, your staff can offer an improved and more knowledgeable wine service, helping customers make better wine choices that best suit their personal taste and ideally also the food they choose. As a result, you are more likely to up-sell your wines on your wine list and may therefore increase wine sales. Most importantly your staff will make customers feel appreciated and will come back.

 

WHAT IS REQUIRED FROM YOU

Different to other service providers (who will bring a generic range of wines that may or may not correspond to those on your list) or suppliers (who will push their own wines) you will want to provide some or all of the wines from your wine list. This way, your staff be truly be able to understand and learn about the wines on your menu. Staff will feel appreciated.

 

WHAT IS COVERED

  • A brief introduction on wine growing regions, the different grape varieties and their characteristics.
  • Aroma samples to demonstrate the aromas that can be found in wine. We will bring along an array of common and unusual scent samples to capture your staff’s imagination of some of the things going on inside a wine.
  • Tasting the wines while communicating the rules to a systematic approach to tasting (SATS) as taught by WSET which is the industry standard to evaluating wines
  • Food and wine pairings – we will bring food samples that represent the 6 main flavour profiles that can be perceived – sweetness , acidity, saltyness, bitterness, umami, spicyness (or pungeancy) and creaminess (or fattiness). This is one of the most important skills your waiters need to be armed with when suggesting pairings of wine (or other drinks) with dishes on your menu. It will lead to a more enjoyable experience if your staff can assist staff with the perfect drink.
  • All course or training material such as tasting sheets or food and wine matching charts will be included.
